Vegan Tofu Scramble

What you’ll need:

  • 1 block extra-firm tofu
  • 1-2 Tbsp olive oil
  • 1/4 medium red onion 
  • 1/2 medium  bell pepper 
  • 2 cups kale 
  • ½ cut mushrooms
  • 1/2 tsp sea salt 
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 tsp chilli powder
  • ¼ cup vegetable broth
  • 1/4 tsp turmeric 
  • 1/4 tablespoons nutritional yeast
  • 1 teaspoon paprika
  • Freshly cracked black pepper

Drain the tofu. Give the tofu a shake to get rid of all the extra water. Put that tofu in a towel and give it a good old fashioned press.  Press the tofu for 15 minutes. You can even put a heavy object on top, like a cast-iron skillet, to really get the water out. 

Add dry spices to a small bowl and stir in the vegetable broth. Toss those dry spices into a cup or small bowl and give ’em a good stir.

Heat a large nonstick frying pan over medium heat.  Add oil and fry the tofu, crumbling it as it cooks,until it turns light brown.  Approx 5 to 7 minutes.

Add the Onion, Pepper, and Mushrooms to the skillet with your tofu. Cook until softened – about 3 minutes.  Then toss in the kale.  Cover with a lid and let steam over medium heat for an additional 2 minutes.

Lastly pour the seasoned broth over the scramble.  Stir until the the broth is evenly distributed and all liquid has been obsorbed.  Remove from heat and serve.
